An appetizer staple, as it should be considered. Stuffed mushrooms are delightful. Your tray of goodies won't make it around the room I can promise you that. So let's get to stuffin'!
- Mushrooms. Your local grocer should have the 'stuffer' caps out there. The bigger the shroom the better. I find that two containers is sufficient.
- 4-6 garlic cloves
- 2 jalapenos
- 1 yellow onion
- 1 lb of Italian sausage
- 1 red pepper
- Vegetable oil
- 1 block of cream cheese
- 1 bag of shredded Parmesan cheese
- Crushed red pepper
Rinse off your mushrooms then pop the stems off the caps and set aside. When you've got all of your stems piled up go ahead and finely chop those suckers up. Do the same with your pepper, onion, jalapenos and garlic. Side note: you can use as many of the aforementioned ingredients as you want. Remember, this is all your stuffing so make it what you want. I like some heat (jalapenos, crushed reds) love garlic and the rest are good additions I've found.
Shit, before I forget, you should have already had your Italian sausage sizzling in a pan on the stove, so go do that now. Once the meat starts browning go ahead and toss your garlic in for a few ticks. Once those two mesh together then go ahead and throw your peppers and onions into the mix. I don't ever toss the stems into the pan, FYI.
You should also have your cream cheese laying in the bottom of a mixing bowl getting nice and soft to make it easy for mixing.
Once your meat/stuffing mixture is nice and cooked go ahead and dump that over the cream cheese in the mixing bowl. Toss your mushrooms stems into the mix then sprinkle in some crushed red pepper flakes as well. Give the whole kitten kaboodle a solid mix job.
Now that your stuffing is ready it's time to jam that magic into the mushroom caps. Fill a small bowl with your vegetable oil. Take each cap and dunk into the oil then stuff with your mix. Lay the mushrooms onto a baking sheet and fill it up! Once you have all of your shrooms on the sheet go ahead and cover each top with some Parmesan cheese. Toss that sheet into the oven @ 350 degrees for about 20-25 minutes. With about 5 minutes left pull out the sheet quick and douse the mushrooms with a bit more Parm cheese.
After you pull those puppies out just watch in amazement as the vultures circle. Job well done! Enjoy.
